
The stars aligned! It was the moment I had been waiting for! Finally, it was Taco Tuesday AND Cinco De Mayo! Yes! On the same day! That meant time to make the foods and eat the foods! Our dinner wasn't anything fancy or extravagent per se, but it sure was delicious: pollo asado that had been marinating since the previous afternoon, fresh and warm homemade flour tortillas, and this little side that just came together so easy: kale and black bean sauté. Truth is, I only bothered making the chicken and veggies so my other half would make his famous flour tortillas. These tortillas are so good, that if I had to choose between having chocolate cake for the rest of my life or these tortillas...I would choose the tortillas. One day I will convince him to share his secret recipe! Until then, here is an incredibly easy, healthy and delicious side. It goes great as a filler for tacos, or burritos. Add some queso, salsa and guac...or skip the queso for a vegan version!
Ingredients:
5-6 cups fresh kale, chopped
6 cloves of garlic, minced
1/2 medium red onion, diced
1 - 15 oz can of black beans, rinsed and drained (I like Field Day Organic)
Juice of 1 Lime
1 tsp ground cumin
1 tsp ground coriander
Dash of Bajan Seasoning (can be found at Savory Spice Shop)
Salt and Pepper to Taste
About 1 Tbsp Olive Oil or Safflower Oil for cooking.
Directions:
1. In a medium deep sided pan, on medium heat, add in oil, then kale, and top with garlic and onion. Do not stir. Let sit, cooking for 2-3minutes, half covered.
2. After bottom leaves begin to wilt, stir so that garlic and onion are evenly distributed among the kale. Add in black beans, stir to coat and cook for 2-3minutes.
3. Add in cumin, coriander, dash of Bajan seasoning (if you don't have this, you can skip it or add in a little extra dash of coriander instead), and lime juice. Stir to coat evenly (maybe 1-2minute), then turn off heat. The kale should be cooked down but not mushy.
4. Season to taste with salt and pepper. Enjoy! :)
