"Best Dinner Ever" - Shrimp and Green Bean Chow Fun

I agree, it's a pretty unlikely name for what is literally a one bowl meal. But it's exactly the comment I got from Luis after he cleaned off his bowl and went back for seconds. I asked him why he called it the Best Dinner Ever when it was so simple, and surely I've made much nicer, more complex meals. His answer was perfect, "It's a very easy recipe, and it's one of the most delicious meals we've had." So I couldn't disagree, it really was insanely easy (as FAST) to make, and it really was delicious (there were no left overs). So here it is, the Best (one bowl) Dinner Ever (or aka: Shrimp and Green Bean Chow Fun).


Ingredients:

1 - 20 oz package of chow fun noodles

3 Tbsp Soy Sauce (divided as 1 Tbsp and 2 Tbsp)

2.5 Tbsp Oyster Sauce

1 Tbsp Szechuan Sauce (if you can't find this, you can sub with 1 Tbsp Soy Sauce and 1 Tsp Siracha or other hot sauce)

3 Cloves Garlic, Minced

2 Tsp Brown Sugar

4 Tsp Cornstarch or Potato Starch

2 Medium Carrots, Julienned (or finely chopped works too)

2 lbs Green Beans, washed and chopped in half

2 lbs Shrimp, Shell off (can substitute with any other meat, tofu or more veggies)

1/3 Cup Water

1 Tbsp Safflower Oil (or Olive Oil)

1/2 Tsp Toasted Sesame Oil

Salt to taste


Sesame seeds and cilantro or green onion to garnish, optional.


Directions:

  1. Marinate shrimp in 1 Tbsp soy sauce and garlic, be sure to toss and coat evenly. Let this sit while you prepare the other ingredients.

  2. Combine remaining 2 Tbsp soy sauce with Oyster Sauce, Szechuan Sauce, Brown Sugar, Cornstarch and 1/3 cup water, mix until the Cornstarch dissolves.

  3. Cook Chow Fun noodles as directed on package, be sure to rinse with cold water after you drain the noodles.

  4. In a Wok or deep sided pan, heat oils on medium high, add in carrots and green beans, stiring for 1min, then reduce heat to medium. Cover and cook 3 min.

  5. Next, add in the shrimp marinated in soy sauce with the garlic and stir around the wok, cooking uncovered for 1-2 min until they turn pink.

  6. Add in the cooked chow fun noodles and sauce mixture, stir so everything is evenly coated, and the sauce thickens (1-2min).

  7. Salt to taste and you're done! Feel free to garnish with sesame seeds, cilantro and/or green onion, or enjoy as is!
